A coffee laboratory in Ankara

The "lab" in our name is not decoration. We built this place to test, measure, taste and test again, coffee by coffee.

Our story

It started with curiosity

Roaster Lab was founded when we set out to follow our passion for coffee. In the heart of Ankara we wanted to build a laboratory where freshly roasted, distinctive, high-quality coffee could be discovered sip by sip. The aim was never just to sell coffee, but to offer a different experience in every cup.

Our coffee is made up of carefully selected single origins and our own blends. We roast green coffee from four countries in small batches, at the point where each bean best shows its own character. We try to reflect our commitment to coffee not only in taste but in culture: brew guides, courses and the long cupping mornings at the roastery are all part of that.

Coffee is more than a drink to us. That is why, on the road from farm to table, sustainability, fair relationships and openness matter to us as much as flavour. When we do not know something, we say so; that is why our transparency page exists.

Our vision

From Ankara to the world

We want to keep creating coffee experiences that are high quality, different and memorable. By bringing together Turkish coffee culture and the wider world of specialty coffee, we run a small experiment in every cup and keep discovering new flavours and aromas.

Every day we aim to grow Roaster Lab and bring new flavours to people who love coffee. We imagine a coffee brand reaching out from Ankara to the world; but growing without ever giving up small batches, open communication and the cupping table.

The roastery

In the roastery we moved into in June 2026 we roast two to three days a week. We are open to visitors during roasting hours; walk in and watch.

The café

The small bar at the front of the roastery is where you can try every coffee roasted that week as filter and espresso. The menu is short; the coffee is fresh.
