Description
Huila lies in southern Colombia, between two branches of the Andes. Our producer partner is a group of small farms around Pitalito; each harvests its own coffee, ferments and washes it on the farm and dries it in parchment. We buy a regional lot the farms prepare together, made up of Caturra and Castillo.
This coffee is about fullness. Milk chocolate and caramel lead in the cup, with the fresh, juicy acidity of red apple on top. The body is round, the finish sweet and long. It holds its own with milk, but we like it most as a plain filter coffee.
We roast it medium, just enough to soften the acidity and bring sweetness and body forward. A coffee that works comfortably for both filter and espresso, at any hour of the day.
Brew tips
